An Easy, Contagious Paleo Meal That Even My Kids Love!

I have been on a mostly strict Paleo diet since December 2016.  Since then, I have been eating meats, fruits, veggies, eggs, and nuts all day, every day.  One of the things about Paleo is that it is very difficult and time-consuming to maintain.  You need to prep recipes ahead of time because there is so much more cooking than normal.  As a mom of two and a mostly full-time work schedule, easy recipes are a must for me!

I searched on Pinterest for easy, yet delicious meals and came across something that sounded promising:  Pork chops with cinnamon, honey apples on top.  Yum!

The first time I made this meal, I followed the recipe to a T.  It was great, but I needed something a little easier and less time-consuming.  So, I played with it and came up with my own variation.  The original recipe called for more cook time and for brown sugar-not Paleo friendly.  I omitted the brown sugar and didn’t cook the apples as long as the recipe called for.

My kids LOVED it! My 4 year old always asks me to make this meal for her as it is her favorite. It reminds me of Fall, which is my favorite season.  Here is what I do for the apples:

I peel and cut up the apples.  While doing that, I melt about a tablespoon of grass-fed butter in a medium-sized pan.

Then, after I toss in the apples, I sprinkle a nice helping of ground cinnamon on top of them.  I stir them up a bit.

Next, I squirt some pure honey on top-probably a good tablespoon as well. Stir some more!  Here is what they looked like after about 10 minutes of cooking:

Ugh, they are SO good, and even better, completely Paleo. So you can eat as many as you’d like ;).

For the pork chops, I topped them with olive oil, salt, and all-purpose seasoning.  These were cooked on top of the stove for about 25 minutes.

The asparagus was cooked in the oven and was also drizzled with olive oil, sprinkled with salt and all-purpose seasoning.  They were cooked at 350 for 25 minutes.

Delicious and such a super easy meal to make.  The combination of the pork and apples gives this meal such a sweet and savory flavor.  It is one of my favorite food combinations.  Can’t really see putting apples on top of a steak.

It is such a comforting meal that I make it at least once a week!

My husband is an incredibly picky eater.  He eats anything bad for you-hot dogs, hamburgers, pizzas, crackers, pop-tarts, waffles, cereal, did I mention pizza? This is his favorite food!  He found out in high school that he is actually a super-taster, which means that textures and sight alone can prevent him from even trying a bite of food.

He does, though, love most fruit and meat (of course).  One of his favorite desserts that I make in the fall is Peanut Butter Apple Crisp, with mostly peanut butter.  This dish reminds him of that dessert due to the cinnamon flavor of the apples.

I had him try it, and he couldn’t stop eating everything on the plate! (except the asparagus).  If this meal earns the thumbs up from my husband, then anyone will enjoy it!

If you too are on a Paleo diet, this is one of the most simple meals to make and it doesn’t fall back on flavor.
